Fried Squash

I've been trying to come up with stuff to make my husband eat his vegetables a lot better. While I know this shouldn't be an every day thing but maybe it will help slow him into eating veggies. So I started with chopped squash.

Dipped in two beaten eggs and half a cup of milk.

Then coated very very well in cornmeal, breadcrumb, salt, and pepper. Make sure it is very dry because water and oil do not mix.

Drop it in a pan with about an inch or inch and half full of oil (vegetable oil will work just fine) Make sure the oil is at least 350 degrees before you put the sqaush in.

This is the delicious finished product. It can be as crispy as you want it to be. I want to try and fry tomatoes next.
